Spiced Meatballs

Spiced Meatballs

Ingredients:

1 medium onion, finely minced
2 tablespoons butter
1 1/4 pounds lean ground beef*
1/2 cup soft bread crumbs
1/2 cup milk
1 egg, slightly beaten
1 teaspoon salt
1/4 teaspoon ground nutmeg
dash allspice
3 to 4 tablespoons butter or margarine, for cooking meatballs
3 tablespoons all-purpose flour
1 1/2 cups beef broth or bouillon

Preparation:

*or 1 pound lean ground beef and 1/4 pound ground pork. Cook onion in 2 tablespoons of butter; combine with meat, bread crumbs, milk, eggs, and seasonings. Mix together and form into firm balls about 1-inch diameter. Cook in small batches with a little butter or margarine and shake pan frequently to help prevent sticking. When all meatballs have been browned on all sides, stir flour into pan drippings. Gradually stir in beef broth. Stirring constantly, cook over low heat until thickened

Menemen - Scrambled Eggs with Vegetables
2 cups green pepper, chopped
1 cup diced tomato
1 small onion, finely chopped
2 eggs, beaten
3 tbsp oil
½ tsp salt
1 pinch of black pepper (optional)

Place the oil and onions in a pan and sauté the onions for 2-3 minutes over low-medium heat. Then, add peppers and salt. Close the lid and cook until the peppers become soft by stirring occasionally. Add the tomatoes, stir and cook for 5-6 minutes with the lid closed. Finally, add the beaten eggs and stir. It’s done when the eggs are cooked. You can sprinkle some black pepper on top if you like.
Menemen is a very good and famous dish for breakfasts.
Serve it with bread while still warm.

Ingredients

1 (19.8 ounce) package brownie mix
1 (3.9 ounce) package instant chocolate pudding mix
1/2 cup water
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed
1 (12 ounce) container frozen whipped topping, thawed
1 (1.5 ounce) bar chocolate candy

Directions

1. Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.
2. In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.
3. In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish. Refrigerate 8 hours before serving

Ingredients:

8 oz. pkg. milk chocolate kisses
1/2 cup butter, softened
3/4 cup peanut butter
1/3 cup sugar
1/2 cup light brown sugar
1 egg
2 Tbsp. milk
1 tsp. vanilla
1-1/4 cups flour
1 tsp. baking soda
1/4 tsp. salt
more granulated sugar

Preparation:

Heat oven to 375 F. Remove wrappers from chocolate. Beat butter and peanut butter in large bowl until well blended. Add 1/3 cup sugar and brown sugar; beat until light and fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture. Cover tightly and chill for 4-8 hours in fridge.

Ingredients

1/2 cup butter or margarine
1 cup white sugar
1/3 cup unsweetened cocoa powder
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts (optional)

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
2. Melt butter in medium sauce pan. Remove from heat, and stir in sugar and cocoa. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the chocolate mixture until just blended. Fold in walnuts, if desired. Spread the batter evenly into the prepared pan.
3. Bake for 25 minutes in the preheated oven, or until a wooden pick inserted into the center comes out clean. Cool in pan on a wire rack.

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup vegetable oil
2 eggs
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoons vanilla extract
1 cup finely grated carrots
3/4 cup finely chopped pecans
whipped cream or whipped topping for garnish, or frost with cream cheese frosting

Preparation:

Preheat oven to 300°. Grease and flour a 9-inch square baking pan. In a large mixing bowl with electric mixer at medium speed, beat flour, sugar, oil, eggs, baking powder, cinnamon, salt, and vanilla until smooth and well blended. With a wooden spoon, stir in grated carrots and pecans. Pour batter into prepared pan. Bake for 45 to 50 minutes, until cake pulls away from sides of pan. Cool and cut into squares. Serve with whipped cream or whipped topping.

2 pounds sirloin steaks or other

15 cherry tomatoes
12 small whole onions or onion wedges

Preparation:

Prepare dressing mix according to package directions. Add beef and coat well with mixture. Cover and refrigerate for 4 to 8 hours. Add vegetables to the beef and toss to coat. Arrange beef and vegetables on skewers. Broil or grill over hot coals to desired doneness. Serve with rice and a tossed salad.

Ingredients

4 teaspoons salt, or to taste
2 teaspoons paprika
1 1/2 teaspoons ground black pepper
3/4 teaspoon onion powder
3/4 teaspoon garlic powder, or to taste
3/4 teaspoon cayenne pepper, or to taste
3/4 teaspoon ground coriander, or to taste
3/4 teaspoon ground turmeric, or to taste
4 (16 ounce) t-bone steaks, at room temperature

Directions

1. Preheat an outdoor grill for high heat, and lightly oil the grate. Stir the salt, paprika, black pepper, onion powder, garlic powder, cayenne pepper, coriander, and turmeric together in a small bowl; set aside.
2. Rub the steaks on all sides with the seasoning mixture. Cook on the preheated grill to your desired degree of doneness, 3 to 3 1/2 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

Ingredients:

1 to 1 1/2 pounds lean ground beef or turkey
1/2 cup long-grain rice
1/2 cup finely chopped green bell pepper
2 tablespoons minced onion
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 can (approximately 20 ounces) enchilada sauce
1/4 cup water

Preparation:

In a medium bowl, combine turkey, rice, bell pepper, onion, salt and black pepper; mix well. Shape into balls about 1 inch in diameter; place in slow cooker. Combine enchilada sauce with the water; pour over the turkey porcupine meatballs. Cover and cook on LOW setting for about 5 1/2 to 6 1/2 hours or until rice is tender. Converted rice (Uncle Ben's) tends to hold up a little better than regular long grain. Check near the end of cooking time to make sure rice does not get mushy. To serve, spoon sauce over meatballs.
Makes about 2 dozen meatballs.

Ingredients:

1/2 cup salad oil
1/4 cup white wine vinegar
1/4 cup sliced red onion
1/2 teaspoon dried leaf basil
1/2 to 3/4 teaspoon salt
1/4 teaspoon ground black pepper
8 ounces thinly sliced fresh mushrooms
1 pound spinach leaves, torn into bite-size pieces

Preparation:

In a small bowl, combine oil, vinegar, onion, basil, salt, and pepper. Add mushrooms, cover, then let marinate for about 2 hours at room temperature or overnight in the refrigerator. Stir occasionally to keep mushrooms coated with marinade mixture.
Place spinach in a salad boil; add mushroom mixture and toss well. Serve immediately.

Ingredients:

1 small onion, sliced
1 tablespoon butter
1 pound lean ground beef or ground chuck
4 slices rye bread
8 to 16 ounces sauerkraut, drained and rinsed
4 slices Swiss cheese
Thousand Island Dressing, optional
dill pickle slices, optional

Preparation:

Sauté the onion slices in butter; set aside. Shape ground beef into four patties; fry in skillet or broil to desired doneness, turning to evenly brown. Place hamburger patties on the rye bread slices on a broiler rack. Top burgers with sauerkraut, onion, and cheese. Broil until cheese is melted. Serve with Thousand Island dressing or pickle slices if desired.
Makes 4 Reuben Burgers

2 teaspoons baking powder
1 (14 ounce) can sweetened condensed milk
1/2 cup butter, melted
1 1/3 cups flaked coconut
2 cups semisweet chocolate chips
1 cup chopped pecans

Directions

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a small bowl mix -----er crumbs, flour and baking powder.
3. In a large mixing bowl, beat condensed milk and margarine until smooth.
4. Add -----er crumb mixture and blend well. Stir in coconut, chocolate chips, and pecans.
5. Drop by rounded teaspoon on a cookie sheet sprayed with non-stick spray. Bake 9-10 minutes or until lightly browned. Store loosely covered at room temperature.
